Frank Torres farms Finca La Indonesia near La Unión in Nariño, continuing his family’s work in coffee. A trained Q grader, he has also worked in coffee buying and producer support, experience he brings to cultivation and post-harvest experiments on the farm. His approach emphasizes soil care and close attention to the processing of individual varieties, including this Sidra selection.

Variety

Sidra is an Arabica selection associated with specialty production in Ecuador and also cultivated elsewhere in Latin America. Genetic studies have placed tested Sidra material in the Ethiopian genetic group. It is valued for cup-quality potential, with cultivation and processing shaping the expression of each lot.

Processing
