Farm and Producer

Damaris and Dafsne Gallardo own and operate Finca Jurutungo in Panama's Chiriquí highlands. The Café Gallardo team, including José “Pocho” Gallardo, processes the farm's Gesha and Caturra selections.

Jurutungo is a separate farm from Nuguo within the Gallardo family's coffee operation. This selection is the honey-processed Gesha lot 753JHF.

Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.

Processing

Honey processing removes the cherry skin while retaining some mucilage, the sticky fruit layer around the seed, during drying. No honey is added: the name refers to that retained fruit material, which can influence sweetness and texture.
