Farm and Producer
Sutera EXT comes from Hachi Project's work at Jurutungo in Chiriquí, Panama, with Allan Hartmann and Diego Bermudez. The coffee grows at 2,000–2,200 meters near the Talamanca range, in a forested landscape shaped by steep terrain, mist and changing temperatures.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.
Processing
For this sous-vide preparation, parchment coffee is vacuum-sealed with mucilage and an enzyme solution, then held in a water bath at 60°C for two hours. The treatment controls temperature and oxygen exposure while enzymes act on the fruit material. Low-temperature drying in a dark environment follows.
Sous-vide means processing in a sealed bag within a controlled water bath. Here it describes the treatment of the coffee after harvest, rather than a brewing method.
